Local ingredients such as Wadden Sea salmon, oysters, Rømø prawns and marshland pigs find their way onto our menu throughout the year, and the taste is influenced by the grass and herbs that the animals eat in the marshes by the Wadden Sea. We love the local, and at the same time we also have an international outlook, which we combine in our kitchen.
